Paleo Coconut Chicken Skillet

I don’t follow a specific diet. I don’t eat Paleo or Keto or vegan because I don’t like food rules. I put “Paleo” in the title to make it easier to search for a dairy free, veggie and meat meal. I, personally, eat what tastes good including grains, dairy, and carbs. I do prefer to make meals with whole foods and the faster and easier the better. I believe in healthy fast food.

Here is the newest quick and easy dinner to come into my rotation. You can prep the veggies ahead of time or cut them up while you start cooking the chicken.


  • 1 pepper
  • 1 onion
  • 1 carton of mushrooms
  • 2 handfuls of spinach
  • 2 chicken breasts
  • can of coconut milk


  • cut up chicken into chunks
  • cut up veggies
  • cook chicken and veggies in a wok or skillet
  • when chicken is just about done add in the can of coconut milk and spinach
  • cook for 5 more minutes
  • serve as is or over rice/quinoa

That’s it! It’s quick, simple, and delicious. Great source of veggies, protein, and healthy fats for the perfect dinner.
